The best Knäckebröd (crisp bread) recipe ever...

Knäckebröd, or crispy bread is a tradition emerging from our home county of Värmland.  Since crispbread then contains less than 10 percent water it stores for a long time, something that was even more important in older time when other conservation opportunities were lacking.  There have also been reports that both fermented grains and these crispy dry breads are much more suitable for the body than our modern breads.  Our lovely neighbor invited us for Fika (pronounced "fee-ka") that basically implies "drinking coffee" although often with a sweet or snack and gave us the best Knäckebröd we've tasted.  Full of seeds and flavour we thought we would share the recipe- it's super easy to make.

1dl Spelt wholegrain flour
1dl Spelt flour
1dl Sunflower seed
0.5 dl Pumpkin seed
0.5 dl Linseed
0.5 dl Sesame seed
1 tsp Sea salt
0.5 dl Rapeseed oil
2.5 dl warm water
 
Mixed up into a paste the mix is spread out on an oiled baking tray and baked at 150 C for around an hour.  Delicious!  This is a different mix to the drier doughs of traditional round breads typical all over Sweden, the photo below from Värmland dates back to 1911.  These are great too, the hole in the middle allowing the breads to be stored on a wooden pole in the kitchen ceiling for keeping.

Yvonne, dl is the abbreviation for deciliter.

Hi. I visited Sweden recently an fell in love with Knäckebröd. Your recipe looks great, but are you able to give me the measurements for the dryingredients in cups, rather than dl's please. Thanks heaps.

1 dl = 100 ml = 0.41 cup

Thanks so much for putting this recipe up. Super easy to make - and store - and eat! It's a staple in our house. I love it as-is, in small bits straight out of the tin, while Mum tops her larger pieces with avocado for lunch or (apologies to all non-Australians) with butter and Vegemite for afternoon tea.

I make a couple of small alterations: I use ordinary wholemeal wheat flour and rye flour (simply because they're always in my pantry, and spelt is more expensive) and sometimes a different mix of seeds, for a change. More importantly, i cut lines in the batter before it's baked hard, so that when it's baked it will break into pre-planned sizes - about 15 x 10 cm and about 3 x 6 cm (anyone who wants to know what that is in imperial, just google it, same as us metric people have to do with all those very confusing galons, ounces, bushels, and sticks ;-)

converted to cups, makes a little more but the proportions are the same.

1/2c Spelt wholegrain flour
1/2c Spelt flour
1/2c Sunflower seed
1/4c Pumpkin seed
